A simple office lunch: the healthy, tasty and cheap way to eat

  • 1 bag of seasonal salad
  • 6 cherry tomatoes
  • 3 sunblushed tomatoes
  • 2 artichoke portions
  • 1 tbsp dry fried onions
  • Freshly ground spices (to taste)
  • 1/2 punnet fresh strawberries
  1. Place the bag of salad in a bowl and toss with the remainder of the ingredients (except the strawberries, ground spices and dry fried onions)
  2. Grind the spices and place the dry fried onions over the salad
  3. Wash and place the strawberries in a container to serve
  4. Enjoy the finished meal
NB. This meal is cheap, very easy, low calorie and tasty. The ingredients were all sourced from ‘basic’ supermarket ranges, discount stores or Kirkgate Market in Leeds (I will be writing an article on this at a later date).
